Breakfast using Our Dehydrated Vegetables and Cured Bacon


My husband decided to cook a delicious smelling breakfast on this rainy Saturday morning using some of our dehydrated vegetables along with the bacon we processed ourselves. This was the more fatty part of the bacon that we left in chunks to add as flavoring in other dishes; however, it's also one of my husband's favorite parts.

He started with chopped onions in a pan with a bit of butter. Then he combined the bacon, along with a few of our dehydrated vegetables from last summer: celery, green and red peppers plus tomatoes. He added garlic and tequila. I know, that came as a surprise to me as well but the balsamic vinegar had congealed and he wanted to flavor his dish up a little. The alcohol cooks out anyway.


Here is a shot of the bacon mixture as he was cooking it. He likes his vegetables al dente. I'd love to give a review of the meal but I could not sample the end product since I appear to be suffering from some mild diverticulitis pain, probably from choosing soda over my normal water last week.

I linger over a single soda for hours so my liquid intake would have been drastically reduced. When will I learn? He thought the dish was pretty tasty so I will have to take his word for it. My coffee and yogurt were also delicious but I need to make a permanent change and get that kefir recipe out!

Yum! So sorry to hear you're hurting Kathy. I've been there. My thoughts and prayers go out to you. Your hubby sure can cook. Please ask him how long it takes to soften up the dehy veggies. I haven't used them in anything that wasn't a soup or stew yet, but I'd sure like to.

When I have used the potatoes in a casserole or cooking in something else hot we don't bother to rehydrate them, they will do it themselves. Other than that you can soak them in cold or hot water, hot working faster depending on what vegetable it is. It can take anywhere from 30 minutes to a couple of hours so find a good rehydration guide. Nesco's dehydrator comes with a guide for both dehydrating and rehydrating. Gosh I can almost taste it! How in the world did you process your own bacon? I am joining an organic co-op in my area. I can pick any veggies I want for $20.00 a box. And I just found out there is a u-pick blueberry patch just north of me. I may take a ride up and pick a few buckets full.I always keep them in the freezer and they are as fresh as the day I get them!~Ames

It's very time consuming. In another week there is another step plus we hang the big hams for a year. No refrigeration, like the kind you see hanging in burlap.

Candy, yes. I get this once in awhile but this time it's different. It hurts to touch my lower left side (abdomen) and it feels all puffed up inside like it's a blown up balloon. I think I might have to schedule an appointment.
