Cooking with our Rendered Lard


Here it is, the very first item cooked in our recently rendered lard. It's potato pancakes, all nice and crunchy outside but beautifully light and soft inside, just perfect for melting cheese all over and dabbing on a bit of ketchup.

I can't say it was our healthiest meal- potato pancakes and SPAM! But it sure was a good one.

The potato cakes look great. I use to eat these when I was a kid. I have wanted a good recipe for a long time. I have tried many, but they weren't right. Your's look just like I remember them. Could I please get the recipe.

I hate to tell you but these were pre-made. the ones we make take a bit of time so we wait until the weekend. Although these were frozen, they cooked up so differently in lard than in cooking oil. I don't remember the brand but I believe they come in a cardboard sleeve. Our homemade ones are more like latkes. I'll have to do something on them soon.

Do you think she made them out of mashed potatoes? Did they look shredded inside or smooth? That's the only way I can think to get the perfect oval shape. When we make our own hommade ones, they are irregularly shaped since they won't stay in a perfect patty form.
