Grilling: Chicken Breast with Pineapple and Vegetables


Ingredients
Chicken breasts.
Pineapple rings
Cucumber, peeled
Green Tomato
Onions
Lemon/pepper seasoning
A drizzling of butter to moisten
Balsamic vinegar
Sugar
Salt
Olive Oil
Italian Salad Dressing

Grill meat and vegetables on the barbecue or indoors on the grill thingy (???)
until you get nice stripes. Do the same with the vegetables but drizzle on the following (to taste)

Onions- use butter and olive oil
Cucumbers (nothing)
Tomatoes - balsamic vinegar, salt and sugar

Salt, sugar, butter, vinegar and oil- just use a tad, not much.
Less is better.

I used a little Italian salad dressing on the side and dipped my vegetables.  I had never had grilled cucumber and green tomatoes before but they are pretty good.  The pineapple is so sweet, delicious grilled.  I had a second ring!  Pretty good for a quick recipe on the fly.
Tom's a pretty good cook.

Looks great. I love pineapple grilled. Have you ever tried a peach, they are so good.

I was just asking him if we could grill a peach next time too. All we had were sliced ones.

My husband likes to cook and experiment with all sorts of flavors. I was thin before I married him. :(

Looks great but I have to ask, don't you people ever eat bologna or ham sandwhiches like the rest of us? I suddenly feel sooooo inadequate.

Oh yes. Schnucks 10 for $10 bologna in the freezer. Right now he has to watch everything and get his weight down, me too. Ham sandwiches are not too bad, it depends on what you put on them. The deli sliced thickness doesn't have many calories but the cheese does! I love ham sandwiches. With spicy mustard and swiss cheese, lettuce, tomato and BACON!
