We have Salsa Verde !
My husband made good use of his time at home today by making a batch of salsa verde using our tomatillo harvest. The salsa has a citrus flavor and packs just the right amount of heat, not too hot for me and warm enough for him - he loves his hot sauce!
We had tortilla chips on hand but future meals may include
chicken or pork quesadillas .
Ingredients
12-15 tomatillos, (husks removed, sliced into quarters)
5 cloves garlic
1 medium onion coarsely chopped
1 bunch cilantro
1 teaspoon salt
1 teaspoon vegetable oil
1 jalapeno, seeded
3 large green chiles, (Poblano peppers) roasted and skins removed
1 tablespoon lemon juice - (recipe calls for lime juice but we were out)

Preparation:
Add onions, jalepeno and tomatillos into a food processor and pulse 4-5 times.
Add in remaining ingredients and pulse until desired consistency.
Chopped, leaving a little chunkiness to it.

ReplyDeleteMy daughter is a vegetarian and fell in love with it. Also our chili verde (she ate around the pork) which I think is a little too hot for my taste but everyone else thought it was super. I'll be posting that as well. I assume you can substitute chicken or even beans for those that don't eat pork.
DeleteLooks yummy! Someday I am going to work on my knife skills. Until then, I love things that you just throw into a food processor. I have a Cuisinart, but I just got a little hand-cranked food processor that does surprisingly well.

DeleteWe thought about mixing it with some red salsa sometimes too for a mix.
